Sweet corn/Mokkajonna vadalu in Air Fryer

Sweet corn vadas are sweet and spicy vadas that are yummy as snacks on a rainy day along with hot chai🍵
I am sharing the air fryer version that came out as good as the deep fried ones       (even better because they were guilt free 😛)

INGREDIENTS:

1. Sweet corn(off the cob)- 1 cup
2. Green chillies-2
3. Salt to taste
4. Corn Flour- 1-2 tbsp for binding(as required)
5. Chopped coriander leaves- 1/2 cup
6. Chopped Spinach/Palak- 1/2 cup
7. Oil spray/ 1 tsp oil
8. Coriander and Jeera Powder- 1 tsp
9. Garam masala- a pinch

METHOD:

1.  Take the sweet corn, chillies and salt in a mixie jar and blend to a smooth paste.

2. Take the paste in a mixing bowl, add in the rest of the ingredients except the corn starch and the oil.

3. Add in as much corn starch as required to absorb the moisture produced by the corn. Do not make the dough very tough which happens when excess corn starch is added. Just add enough to be able to make patties/vadas.

4. Make small patties and layer them in the air-fryer. Spray them with the oil.
Air fry them for 10 mins at 350°F and then check them and turn them over.         Fry them for another 5-7 mins.

I used olive oil spray but you can use a spray or drizzle 1/2- 1 tsp oil on the vadas to prevent them from sticking to the air fryer.
You can also use a parchment paper like I have, and not use any oil at all.

Enjoy this hot with Tomato Ketchup or mint chutney.
I had made this for Varalakshmi pooja and offered it as Naivedhyam😍
