This dish is well known in Maharashtra, India especially made during the times of Vrath or Puja(auspicious events)๐.
I have made a few tweaks to it to match my palette!!!
You can do the same and add any extra ingredients or minus the ones I have used๐.

Cooking Time: 8 hours for soaking the sabudana overnight and 1 hour for the final dish!!!
INGREDIENTS:
2. One medium sized potato(boiled and peeled)
3. Salt to taste
4. Turmeric powder- 1/4th tsp
5. Garam Masala- 1 tsp
6. Ginger Garlic paste-1/2 tbsp
7. Finely chopped Green Chilies- 2 or as per spice level preference
8. Crushed Peanuts- 3 tbsp
9. Oil- 1/2 tsp
10. Rice Flour- 1 tbsp
METHOD:
- Mash the boiled potato in a mixing bowl.
- Add all the above ingredients except the crushed peanuts, rice flour and the sabudana.
- Mix well, preferably with your hand(washed ๐).
- Fold in the Sabudana and rice flour(for binding-to hold the vadas in shape) and the peanuts.
- Mix into a nice dough like consistency without adding any water.
- Make patties as shown in the picture.
- Refrigerate them for a minimum of 15 mins before air frying them (OR) refrigerate until you are ready to air fry them.
- Brush the air fryer with some oil to prevent the patties from sticking and preheat the air fryer at 350 F(180ยฐC) for 10 mins.
- Place the patties in the air fryer and fry for about 15 mins, flipping them every 5 mins.
- Once they are golden brown, they are ready to serve with ketchup, coconut or any other chutney.
NOTE:
- The more you refrigerate, the more crispy they are on the outside.
- Add more rice flour depending on the quantity of sabudana and as per the need to bind the mixture.
The quantities mentioned above serves 2 people.
