Sweet Corn Soup

 All Indians would be aware of the yummy Sweet Corn Soup available at the restaurants.

This has been my all time favorite order at any restaurant whenever I go to India.

 I found and tried a simple recipe that is both nutritious and tasty and would definitely tickle your taste buds and make you crave for more๐Ÿ˜€

                                       


Prep Time: 10 mins

Cooking Time: 30 mins

INGREDIENTS:

1.Sweet corn- 2 cups

2. Garlic(3 pods) and Ginger(2 inch piece)- finely chopped

3. Carrots, Bell Peppers- chopped- 1 cup

4. Soya sauce- 1 tsp

5. Salt and pepper- to taste

6. Red chili flakes- 1 tsp(optional)

7. Olive Oil/butter- 1 tsp

8. Rice/white vinegar- 1 tsp

9. Corn Starch- 1 tbsp(make a slurry with 2.5 tbsp of water)

METHOD:

1. Grind 1 cup of corn with 1/2 cup water into a smooth paste and keep aside.

             

        

2. Heat the olive oil and add in the ginger and garlic and fry well. Add in the carrots and bell peppers and fry.


3. Add in the other 1 cup of corn and mix. Add in the pepper, salt and red chili flakes.


4 After mixing for 10 mins add in the ground corn and mix till all the water nearly evaporates.


5. Add 3 cups of water and boil for 15 mins. Add soya sauce, vinegar and adjust salt.

6. Finally add in the corn starch slurry and thicken the soup to the required consistency.

7. Boil for 10 mins and serve hot with croutons(optional).

Spicy Mirchi Bajjis are my favorite dish and go amazingly well with hot Chai especially on a rainy day, as most of you already know๐Ÿ˜‰๐Ÿ˜Š๐Ÿ˜Š!!! Sweet corn/Mokkajonna vadalu in Air Fryer

Sweet corn vadas are sweet and spicy vadas that are yummy as snacks on a rainy day along with hot chai๐Ÿต I am sharing the air fryer version that came out as good as the deep fried ones       (even better because they were guilt free ๐Ÿ˜›)                                            INGREDIENTS: 1.
